Grandma Osmer’s Apple Pie
My sister Kate, aka my built in BFF, has an October birthday. For the last several years, she has requested Apple Pie as her birthday cake. Luckily, my Grandma Osmer had us covered with her Apple Pie Recipe. There are certainly ways you could make this to suit your dietary needs (making/buying GF crust, using 1-to-1 baking flour, etc). However, I am giving it to you the way it was printed on the recipe card that has been handed down through generations of Osmers. As an aside, the Osmers have been known to eat a lot of Apple Pie and we have several centurions in our family. It just goes to show that home cooking mixed with an approach of balance to life may be the secret to longevity afterall!
Crust Ingredients + Directions:
Pie crust recipe of choice. If you are in a pinch with time, these store bought pie crusts will do the trick.
OR make it the way grandma did:
Ingredients:
4 cups of Flour
1 TBSP Salt
1.5 cups Shortening
1 cup cold water
Directions:
Combine/Cut in with spoon and knife. Finish combining with hands.
Roll out into 2 round crusts, one for the bottom and one over the top of apple mixture.
Pie Ingredients:
1 cup sugar (I tend to use a little less, more like 3/4 cup)
1/4 cup Flour
1-2 tsp Cinnamon
dash of Cloves
dash of Nutmeg
1 TBSP of Butter
6-9 Apples - you will use 2-3 apples per layer depending on their size and how packed you want your pie (Whatever is in season is best, but Grandma liked to use McIntosh and she wouldn’t peel them)
Evaporated milk to spread on top
Icing Ingredients:
Evaporated Milk
Powdered Sugar
Directions:
Set oven to 325 degrees
Lay 1st layer of crust in greased pie pan
Spread in this order: 1/4 cup sugar, 1/4 cup flour, 1 teaspoon cinnamon, dash of cloves & nutmeg on top of crust
Put 1 tablespoon of butter on top of sugar & spices.
Slice 2 apples and layer on top
Cover with 1/4 cup sugar
Slice 2 apples and layer on top
Cover with 1/4 cup sugar
Slice 2 apples and layer on top
Cover with 1/4 cup of sugar + dash of cinnamon, cloves, and nutmeg
Lay 2nd crust over all.
Tuck edges of top crust under bottom crust edge. Press edge all around with fork.
Poke top crust with knife marks.
Spread a little evaporated milk over top.
Bake at 325 for 1 hr to 1-1/2hrs until golden brown.
Mix icing together: powdered sugar + evaporated milk to make a semi loose consistency.
Drizzle icing on top when still warm
