Mashed Potatoes and Gravy

Grandma’s Mashed Potatoes
Serves 8 People
Ingredients for Mashed Potatoes:
5lb bag of Russet Potatoes (approximately 10-12 potatoes)
2 tsp Salt
1/2 cup Butter
1/2 cup Cream Cheese
2 TBSP Minced Onion
1 cup hot milk
Optional: Chives and/or Rosemary Sprigs for flavor
Directions:
Boil potatoes in salted water until they are tender.
Drain and then mash.
Add minced onion, butter, and cream cheese and mash in ingredients.
Add hot milk and mash until the potatoes have a whipped appearance.
Serve immediately with chives/rosemary sprigs if desired.
Grandma’s Turkey Gravy Recipe
Ingredients
3 TBSP all-purpose flour or use Gluten-Free 1:1 flour
3 TBSP Turkey Fat or Butter
2 cups of skimmed turkey juices. Add broth if needed to get to 2 cups
1/2 cup milk, stock, or water for your preferred consistency
Salt and Pepper to taste
Directions
Strain turkey drippings from turkey pan through a mesh sieve.
Let sit until fat comes to the top and transfer fat to a medium saucepan. If you don’t have 3 TBSP worth of fat, add butter.
Set saucepan over medium heat. Once the fat is sizzling, whisk in flour and stir until combined. About 2 minutes.
Gradually pour the rest of the juices or broth into saucepan, whisking consistently.
Bring to a boil while mixing.
Add 1/4 cup of milk, stock or water.
Simmer for 5 minutes
Season with salt and pepper to taste if needed.
Remove from heat and cover until ready to serve. It will thicken as it cools.
